Easy muffins for kids


Found this great recipe for muffins in a parenting magazine a few years ago. My kids (and I) love them! (I've even got some baking in the oven right now.)

Makes 12 regular-sized muffins
Ingredients:

16 oz. canned pumpkin
1 box (18 oz.) cake mix (chocolate or lemon work best)
Flax seed (optional)

Mix pumpkin, cake mix and flax seed together, spoon into sprayed muffin pan and bake at 350 degrees for several minutes (I set the timer for 25 minutes and check them, then bake longer if necessary. And flax seed is a great way to get some added nutrition. I put it in all sorts of things--pancakes, waffles, cottage cheese, cream of wheat, and biscuits!)

Pumpkin is full of fiber and vitamins, so this is a pretty healthy way for your child to enjoy a treat--and each muffin only contains 3.5 grams of fat. Enjoy!

Oh man! That has my mouth watering! Sounds great, but anything with cake mix in it is not part of my "gotta lose baby weight so I can get preggo again" diet. Plus, I don't think I can get canned pumpkin down here... but geesh... now I'm hungry! Enjoy your muffins!

hey, zeb and i made muffins this morning too! i needed to occupy him, and it was the only food that actually sounded like it wouldn't make me throw up. banana muffins. i'd been hoarding some bananas for awhile in order to make them, and the bananas were starting to be a little too ripe, even for banana muffins!

I use a regular size can of pumpkin and a spice cake mix... I make this into muffins or a bundt cake (to take to brunch type places). Bake according to the package directions for the size cake/muffins you are making.

My daughter LOVES this and it's pretty darn healthy.
